Farmhouse Beef Casserole

I found this the other day on line & it's what we are gonna have for dinner tonight.  Sounds YUMMY!!!!

1 small 4 oz potato
1 c shredded mozzarella cheese
1 pd ground sirloin
1 medium yellow onion chopped
2 cloves garlic minced
1 14 1/2 oz can diced tomatoes with juice
1 T chili powder
2 c green cabbage shredded
1 to 3 T taco sauce

Preheat oven to 375 Lightly spray 2 quart casserole dish with cooking spray.
Peel & grate the potato into a bowl. Stir in 1/4 c of cheese.  Spread evenly over the bottom of casserole dish.  Bake 15-20 mins til potato is browned & crispy.
Meanwhile brown ground sirloin, onion & garlic in nonstick skillet beaking up the beef with a wooden spoon as it browns.  Discard any fat.  Stir in tomatoes with their juice, chili powder & cabbage.  Season with pepper to taste. Saute stirring for a min or 2.  If mixture seems too dry you can add the taco sauce as needed.
When potatoes are done spoon beef mixture on the top of potates.  Top with remaining cheese. You can add some jalapeno slices here if you want.  Bake 25-30 mins til casserole is hot & bubbly.

This, a salad & maybe some cornbread is what we are dining on tonight!!! =)
