Yummy Taters
So the other night we had taters we needed to use up! I wasn't in the mood for mashed taters, didn't feel like frying taters, DH was tired of baked taters.........so I made up a yummy concoction!!!!
I thinly sliced up the taters & probably 2 onions. Then mixed 2 cans of cream of mushroom soup with some milk in another bowl.
Sprayed the casserole dish with cooking spray then layered taters, onions, soup mixture until everything was gone!!
Baked for about 45 to an hour @ around 425 degrees.
We finished the whole dish. The only thing I'd change for next time is make 2 dishes.......am betting it would be good in the morning for breakfast with some eggs & sausage patties!!!!

Homemade Donuts
Hoss & I got up very early this morning to make goodies for the guys @ DH's work!! We make them something every weekend!!!
They are really gonna need the sugar rush today cuz there is a snow storm coming in so I'm sure they will be busy!!!
The donuts were really really easy to make!! They are the cake kinda of donuts!! But that's my FAVORITE so I was very impressed with them!!!
(sorry the pictures are kinda bad....they were taken with my cell phone!!!)
1 cup all purpose flour
2T Cocoa (just leave this out if you want plain donuts)
1t baking powder
1/4 t baking soda
2/3 c sugar
1/4t ground nutmeg
1/2 t salt
2 T butter cold cut into pieces
1/4 c buttermilk
1/4c sour cream
1t vanilla
1 egg
Sift flour, cocoa, baking powder, baking soda. Whisk in sugar, nutmeg & salt. Add butter-combine all ingrd. w/fingers til coarse. Combine buttermilk, sour cream, vanilla & egg in seperate bowl.
Add wet to dry, fold together. Spray donut pan with nonstick cooking spray, add batter 1/2 full. Bake 8-9 mins @ 350.
Once donuts are cool dip in frosting glaze. I just combine powdered sugar & milk. Make as thick or thin as you want.
Then I dipped in sprinkles.

Crockpot Tater Soup
We made tater soup in the crockpot the other day.....and it was way easy!!!
I chuncked (is that a word??) about a 5 pd bag of taters up, put them in the crockpot with one of the big boxes of chicken broth. Diced up a small onion, added it & some garlic salt to the taters. Cooked them for about 5-6 hours on low.
Then we mashed the taters....not completly mashed cuz DH likes some chunk to his tater soup. Then added 2 8oz packages of cream cheese and turned the crockpot up to high for about 30 mins until the cream cheese was all melted. Mixxed everything up really good & tater soup was served.
We garnished the soup with bacon bits, green onions & cheese!! IF I would have had some sour cream it would have been PERFECT!!!
It's a keeper recipe around this house!!! We'll be making it more & more now that it's turned COLD here!!!

Ranch Chicken WonTon
Do you need a dish to add to your New Year's Eve snacks??? There Ranch Chicken WonTon thingys are a STAPLE at our house on New Year's Eve!!!
1-2 pds of chicken breast (no bone)
Bottle of Ranch dressing
Packet of WonTon wrappers
AND
whatever goodies you want to put in them. We put shredded cheese, green onions, bacon & black olives! But I only put the black olives on mine cuz DH doesn't like olives (he's strange like that LOL!!!)
Boil the chicken, shred & mix with the ranch dressing. How much ranch dressing you use is all to taste....you don't want them way runny but not to dry either.
Take a regular sized muffin pan & spray with Pam. Put the WonTon wrappers in & form them to the sides of the muffin holder things (what are those called???). Bake @ around 375 for 10-15 mins.
Once out of the oven, spoon the chicken into wonton & add whatever toppings you want. Then put them back in the oven for 5ish mins. Pretty much just til the cheese is melted!!!
I make these up & we snack on them all night!!! LOVE LOVE LOVE!!!!
