Chocolate PB Hi Hat Cupcakes


I totally forgot I hadn't posted these yet.....SORRY!!!!  They are super easy to make & from what I was told YUMMY YUMMY!!!  I don't think any of them made it home from DH work the weekend I made them!!!

Cupcakes......

Whisk in bowl:
1 1/2 cup all purpose flour
1 t baking soda
1/2 cup cocoa powder

Cream together in another bowl:
1 1/2 cup sugar
3/4 c peanut butter
2 large eggs

Once creamed weel add 1/2 cup oil, 3/4 c milk, 1/2 t vanilla.  Mix well & then slowly add the flour mixture.

Fold in 1 cup choc chips.

Bake @ 350 for about 25-30 mins


While baking make your frosting up which is....

1 cup unsalted butter @ room temp, 2 c peanut butter, 4 c powdered sugar, 1/4 c & 2T milk added slowly until well blended.  I don't think I used all the milk.

Once cupcakes are cooled.  Put your frosting into a baggie & pipe a swirl of frosting onto the cupcake.  You can make it as big or small as you like.  Place cupcake in freezer for atleast 1 hour.

Right before you take the cupcakes out of the freezer, melt in the mircowave 2 C chocolate chips & 3 T oil.  Stir till well mixxed.  Let this cool just a second or two....THEN COMES THE FUN PART!!!  Take the cupcake out of the freezer & dunk the top of it in the chocolate!!!!  Let the chocolate drip off the cupcake & then put back into the freezer for it to harden & BAM you have a Chocolate PB Hi Hat Cupcake & a sugar high!!! LOL!!
